You think it's better to bend back, or replace the bar? Will the bend in the bar make it weaker for potential future problems?
Your is not to bad, the tube is soft steal and can be easily bent back without any structural damage. When you adjust the tube, measure from the back of the spoiler to the front of the tire to match the drivers side. You will most likely need to adjust the spoiler into place with the mounting bolts because it may have gotten pulled down in the mishap.
Replacement would be depended on whether or not you are having an insurance claim. If you are going through insurance, replace it.

I'm sure new is better but I'm all about fixing something if possible without replacing it all together. After all until I just fessed up no one ever knew it happened.
Kinda reminds me of when Servpro did the clean up after the big fire at GE Appliance Park where I work. General Electric is notorious for slow paying their contractors so the big joke around the factory was "It's like it never happened."

There were some willing to give their wheels to @TheRock when he had bad luck... I'm down to my one set, sold the stock base wheels on ebay, otherwise I would have helped...

once we straighten it out we just cut some of the matching protective vinyl for the front edge
It will match what you have above and you can tell everyone you planned it that way. Honestly that is a pretty easy piece to cut.

Ouch! I just saw this, came with tightening chest and heart sunk to the floor! Sorry for your luck is an understatement. I have a fellow Slingshot rider local to me that hit a bear with his. It bent the bar worse than yours. It was hitting pavement after the hit. He was able to bend it back to look about like yours and drive it home (over 300 miles away at the time). I'm pretty sure he ordered a new bar rather than straighten, but I'm also sure it could be done. As for weakening it for any future hits, it won't take much to bend it in the first place. If I could get it straightened and look good, it wouldn't bother me.
As for the rims, might look into these. You could sell the windshield separately, and your damaged rims for cheap to recoup some of the cost. But at this price, it might be your cheapest way out. $569.99 shipped, wheels, tires, windshield....

That really sucks @ericastar76! I drove my Slingshot with the traction control on for the better part of my first back tire. Usually the first thing I do when I start it up now is to turn the traction control off. Between your mishap and @KayTwo s, I'll likely adjust my driving a bit. Cheaper to learn from other's mishaps (although the lesson seems to stick with me much better if it was more personal and costly to me!)

Finally got around to pulling 'er apart...
My better half says she looks like "Toothless." And here's the bracket...it's supposed to be square.
