I used to get 35mpg on my 2015sl. Now that I boosted I get 29/30. How much more do you want?

To answer your question there is currently only performance tunes. There are a couple options though.
1: You could get a pedal commander type of device and put it in economy mode.
2: Speak with Bob from Mefiburn and see if he he could do a one off tune. This would be cost prohibitive though as he would most likely need your Slingshot to do the tune.
You could try installing a rev limiter and set the max RPM at some insanely low setting of like 3500 RPM. But you'd still have to keep your foot out of the pedal so you're not going full throttle ro reach that point.
If I drive gently (who does that) I get good milage in my Navigator or my Slingshot and maybe if live to be a grown up I may get to the point where I do get good milage....in the mean time I want to have some fun.
Over 3500 rpms? The Slingshot goes above that. Just kidding mine has seen 4500 and I am still not impressed with the mileage.

I used a Vacuum gauge on a old truck back when I was a E3 in the Navy and had to squeeze every mile I could get out of a gal of gas. Same practice as believing you had a egg between your foot and the gas peddle. On rainy days you didn't have to as the window shield wipers would stop if you stepped on the gas to hard.

Same memories here as a teenager driving a 1950" era Chevy.
On the NA applications I have been told that people have actually picked up 1-2 MPG with our tune. That being said, there isn't anything magical you can do in the tuning to spike your fuel economy up into the high 30s or 40s.
Our tune gives you better throttle response, a broader power band, more mid range punch, and better overall drivability. We do this by adjusting things like fueling and timing along with other parameters giving you the best tune possible. We have the option for you to keep your original PCM or we also have PCMs we can send you which allows for faster turnaround time minimizing your down time. The tune we have has been used on thousands of Slingshots since we got into the game in 2016. We spent a lot of time on our mustang dyno to really fine tune it and give you more smiles per mile.

On my 2022 Kia Soul I was getting mid 30s (I've slowed down after the gas price hikes and now getting 40mpg) while my Sling gets 27mpg on the same drive (mostly highway).
While the Sling engine is significantly larger than the Soul, the Soul is significantly heavier.
You can do more about your gas mileage with your driving style than with any tune. Even if you could get a tune made, all it would do is de-sensitize the gas pedal and put rev limiters in. You can do the same thing with your right foot - put an egg between your shoe and the pedal.
I had a ECM controller for my Chevy Avalanche that had an economy mode and that's exactly what it did. If I pressed the pedal, it would just rev up slowly and then limit the top to about 3500 rpm. Needless to say, I only used it that one time.

Stock I got 27.5 MPG with the slingshot. With the supercharger using (and tuned) to the stock exhaust I still get 24.8 MPG. About 6 MPG better than my truck.Typically, between the slingshot and motorcycle I would go out for a ride two to three times a week. Many times stopping for lunch somewhere. With fuel prices and the rising cost of food both at the diner and grocery store & everything in between. Savings being depleted in the stock market I cut back to mainly local errands.

My Kia Soul gets better gas mileage than both my Slingshot and my Triumph Rocket III Touring.

All you can do is slow down. Your Soul is a slip-streamer compared to the Slingshots "aerodynamics".
