Now just remember it is not roast pork or beef that you can cook in the oven. It is cooked on wood or charcoal. It IS "NOT SOMETHING YOU DIP IN SAUCE" after cooking. THAT IS NOT BBQ Real BBQ is cooked on wood or charcoal and finished, "still cooking" the last hour or so with sauce. (NOT SWEET SUGAR SAUCE) North Carolina need not apply, everywhere I have been is roast pork with dipping sauce.

We have Scott's BBQ, three locations. The original is in Hemingway, S.C. that BBQ house will cook around 70 whole hogs or more at a time with oak wood. Many wins and one of the best in the South East. Thanksgiving and Christmas you had better have a reservation to get a BBQ hog.

It has to be someplace in Texas. Pork is great, but until you've had the BEST mouthwatering BEEF Brisket, you haven't had BBQ.

Been to school several times in Texas and that stuff is not BBQ. Don't get me wrong it is good and I like beef but you have to come to the SE to get BBQ.

My sister was stationed in OK. She could find no BBQ out there and we use to send here frozen BBQ from here in Georgetown.

When looking for good BBQ I look for black.
Black owned business.
Black guy cooking.
If it's a truck hauling a smoker even better.
That combination almost always nets me amazing food.

You are correct on that one, most of the time they do have the best BBQ.

A true story that looking back at it, even I wouldn't believe it. On one of my first trips to Florida as an adult, we flew into Melbourne FL and headed down to Fort Lauderdale. Along the way, we passed a road side BBQ truck that was smoking away and smelled great. We had to stop in and grab some food for the ride. We ordered a couple of BBQ Brisket sandwiches and paid for them. When he finished making them, he brought them to the window and I'm sure he was proud of his work. As I reached out to take them from his hand, he says to me, "Fat man can't touch these". I looked at him and said something like BULLSHIT. I paid you for them and I'm damn well gonna take them with me. Now let me explain a couple of things here. First off, I was a couple hundred pounds heavier back then and thought he was using my weight as a dig towards me. But the kicker is that there was a small chain of restaurants in Florida named FAT MAN'S BBQ. I had not heard of them so my reaction was normal. We both had a good laugh over it. He was right though. His BBQ was some of the best I had up to then. After following his families process for several years, they had mastered the art of the Q and did a fantastic job of it. I still chuckle about that day whenever I pass by a road side stand with a smoker going out back

I cast my vote for a tiny little place in Tombstone, Arizona called Puny John's and would invite anyone that travels out this way to stop in. It's a small, family business, owned by a retired Navy couple and they have the best BBQ I've eaten anywhere... 😋

Saw both Black's and Salt Lick. But gotta get to Louis Mueller's out in Taylor. Not just my opinion, but always in a Top 10 and considered a "Heritage BBQ" joint for the US.
In Austin, there is Franklins, but I have never been there (too long of lines - homeless people will stand in line for you for $$).
