Because the moon travels around the earth at around 2200 mph from all sorts of angles. It's all about the two randomly lining up and tracking the moon's path to predict the eclipse.
So if the Earth supposedly rotates at 1000 mph and the moon travels at 2200 mph...a little over twice the speed of the Earth's rotation why don't we see the moon rise and fall twice a day instead of only once?
