I have reused the metal crush ring gasket between the manifold and exhaust for several removals/reinstalls without issue. Don't know if you're supposed to but I did. If it did leak it would be no big deal to swap it out with a new one.

37 lbs. / ft. And recheck after a couple of heat cycles. Manifold studs are 89 lb. / in. Retaining Nuts 124 lb. / in. also check the nuts after a couple of heat cycles

When I put my header on I left the original ring in the converter and added the 3 pointed gasket that came with header. I have also know got rid of the cat and you don't need that ring gasket. And I reused the crush dount gasket at the muffler.
